Chef Duane’s Trio of Entertaining Empanadas –
Compliments of Ottumwa Regional Health Center
Bleu Cheese Empanadas:
Makes 9 servings
Preheat oven to 400’
- Puff pastry – Full sheet cut into 9 squares
- 6 oz. bleu cheese crumbles or your favorite soft cheese
- 8 oz. cream cheese
- 1 tsp. fresh thyme
- 1 tsp. lemon juice
Mix all ingredients thoroughly
Place a teaspoonful in center of square
Fold in half and crimp edges with fork or dough crimp
Place on cookie sheet and bake until golden brown
Italian Sausage and Mozzarella Empanadas
Makes 9 servings
Preheat oven to 400’
- Puff pastry – Full Sheet cut into 9 squares
- ½ lb. Italian sausage
- 4 oz. mozzarella cheese
- 1 tsp. Italian seasoning
Brown Italian sausage in skillet until done
Place sausage in colander and drain grease
Let sausage cool to room temperature
Mix in mozzarella cheese and Italian seasoning
Place a teaspoonful in center of square
Fold in half and crimp edges with fork or dough crimp
Place on cookie sheet and bake until golden brown
Nutella Empanada
Makes 9 servings
Preheat oven to 400’
- Puff pastry – Full Sheet cut into 9 squares
- 1 jar Nutella chocolate hazelnut spread
- ¼ c.Cocoa baking powder
- ¼ c. Powdered sugar
Place a teaspoonful in center of square
Fold in half and crimp edges with fork or dough crimp
Place on cookie sheet and bake until golden brown
Mix cocoa powder and sugar together and sprinkle on pastry
