Corn Pudding

1 can of corn, drained                                  

2 eggs

2 T. flour                                                       

1 green pepper, chopped fine (½ if large)

2 T. butter                                                     

¼ lb. cheese, shredded         

1 t. salt                                                          

 ½ C. milk

Mix all ingredients together and pour into a buttered baking dish. Decorate the top with thin strips of green or red pepper, if desired. Bake at 350-375º for ½ hour. Serves 4.

This dish is a favorite for potlucks:  it travels well and can easily be multiplied for bigger crowds. Just be sure to plan on extra baking time for a larger amount.
