Ingredients:
4 medium eggs
2 ounces diced onions
2 ounces diced green peppers
2 ounces diced tomatoes
2 ounces jalapenos
2 ounces diced ham
4 ounces of shredded cheddar cheese
Directions:
Crack four eggs in a bowl and add 1 ounce of milk and then scramble well. Saute your vegetable and ham in extra virgin olive oil. Pre heat pan or grill to 300 degrees and pour eggs in. Flip eggs when done on one side and add sauted vegetables and ham with 1/2 of your cheese. Roll eggs into an omelete and top with the other 1/2 of cheese and two jalapenos.
