Toot's Coconut Pie

Ingredients:

4 eggs                                                 

½ C. flour

¾ C. sugar                                         

 2 C. milk

¼ C. butter, melted                         

1½ C. coconut

1 t. vanilla

Directions: 

Preheat the oven to 350º. In a large bowl, beat together well the eggs, sugar, and melted butter. Add the flour, milk, coconut, and vanilla and mix thoroughly. Pour the mixture into a greased 10-inch pie pan and bake at 350º for 45 minutes or until golden brown. This pie makes its own crust. It’s quick and easy to prepare and travels well; it’s a perfect potluck dish.

Because this pie is so simple to make, you may want to spend a few minutes jazzing it up for service. Dollops of whipped cream and a drizzle of chocolate sauce would be especially tasty, but you may have other good ideas—like vanilla ice cream and caramel sauce or fresh pineapple.
